Dinner in Seville Park...


Man, I am falling behind on my blogging... I an excuse! I drove 10 hours yesterday (all the while listening to NPR) and arrived in Austin, Texas just last night. Woohoo!! I am here for a good 9-10 days just hanging out and visiting with my sister.But this blog is not about me being in Austin (not yet)...

Ok, so I love to cook. If you have ever been on the receiving end of one of my "boxes of sunshine" then you know exactly what I am talking about. I especially love to cook for people who when you cook a meal for them they are super appreciative. It makes me smile to make someone happy. I think that I have found someone that I can cook for; My brother! I love it. We had a "hang out" night  on Thursday. I made dinner, packed it all up, and we headed down to Seville Square for Music in the Park. It was a great time!

I cooked homemade creamy cheese and broccoli soup, turkey and havarti sandwiches, homemade chocolate chip cookies, baked chips, and sweet tea. I was very excited to cook everything up, and even more excited to get to hang out with my brother.

I have posted below the recipes for the creamy cheese and broccoli soup and the chocolate chip cookies:

 Creamy Cheese and Broccoli Soup:


1/2 cup butter

1 onion, chopped

1 (16 ounce)  chopped broccoli

4 (14.5 ounce) cans chicken broth

1 (1 pound) colby or American (I used half a pound of each)

2 cups milk

1 tablespoon garlic powder

1/4 cup cornstarch

1/2 cup water


  1. In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
  2. Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
  3. In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.

Chocolate Chip Cookies:  


2  cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup (2 sticks) REAL butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 large eggs

1 1/2 cups (12-oz. pkg.) Chocolate Chips


PREHEAT oven to 375° F.

COMBINEflour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for5  minutes; remove to wire racks to cool completely.
